Fryers are sold by oil capacity (lb). Match it to peak fries-per-hour and how often you turn the oil:
| 40–50 lb | The standard tube fryer — handles most restaurants; ~65–85 lb of fries/hr. |
| Dual / split-pot | Two smaller pots so you fry allergen-separate or two products at once. |
| 75–100 lb | High-volume QSR / seafood house. |
Fryers hold hot oil, so code cares about the hood, a proper clearance to any open flame beside them, and safe oil disposal. NSF listing covers the fry pot and the drain valve's cleanability.
Estimate peak pounds of product per hour and divide by the fryer's rated output. A 40–50 lb fryer covers most full-service kitchens; go split-pot if you need allergen separation, and 75 lb+ for QSR volume.
Tube (gas) fryers have a larger cold zone that catches crumbs — better for heavily breaded product. Open-pot fryers are easier to clean and suit lightly breaded or clean-frying foods.
