Dish tables are the landing surfaces on either side of your dish machine or 3-compartment sink: a soiled (dirty) table where dishes are scraped and stacked before washing, and a clean table where they air-dry after. Health departments expect NSF-listed, sloped-to-drain surfaces and enough landing space for your volume. They pair with the required 3-compartment sink.
