Choose by heat output and how it mounts:
| Cheese melter | Lower-powered, for melting and light browning; gentler and cheaper to run. |
| Salamander | Higher output for true broiling and fast finishing. |
| Mounting | Range-mount to save floor space, or wall/stand-mount over a landing area. |
An overhead broiler is a flame/heat source: it needs to sit under the hood envelope with correct clearance, and the removable grease pan and rack are NSF cleanability points.
A salamander runs hotter and can broil and finish proteins; a cheese melter is lower-powered for melting and light browning. If you only gratin and melt, a cheese melter is enough and costs less to run.
Most mount over the range within the existing hood envelope; a stand or wall mount works over a landing area as long as it's still under the hood.
